To use this feature, go to Settings > Accessibility and then click on the Accessibility button. Then, from the drop-down menu, choose Physical and Motor > Touch. Scroll down until you see the "Back Tap" option to return to the previous screen. Then, depending on your preferences, you can choose between Double Tap and Triple Tap.

Volume control, checking the Notification Center, and, perhaps most importantly, capturing a screenshot of the current screen are among the activities available.
